How to make strawberry buttercream frosting

  1. In the bowl of a stand mixer or in a mixing bowl with an electric mixer, whip your butter and strawberry puree until it’s nice and smooth and combined.
  2. Add in the powdered sugar, a little at a time, mixing gradually until it’s all combined. Don’t add it in all at once unless you want a huge mess on your hands, counter, floor, etc.
  3. Add in the vanilla and milk. Just add in enough milk to get t to the thickness and consistency that you want. See note.
  4. Whip the buttercream mixture until it’s light and fluffy, about 5 minutes.

Ingredients

  • 1 cup butter two sticks
  • 7-8 cups powdered sugar
  • 3/4 cup strawberry puree
  • 3 tablespoons milk see note

Instructions

  • To make the strawberry puree, smash or blend enough strawberries to get 3/4 cup – about 1 – 1 1/4 cups of strawberries with the tops cut off.
  • Whip the butter until it is smooth and combined.
  • Add the strawberry puree and whisk until combined.
  • Add the powdered sugar gradually until it is all combined.
  • Add the vanilla and enough milk to create a smooth and creamy consistency. Add the milk just 1 tablespoon at a time.
  • Whip until it is light and fluffy, about 5 minutes.

Notes

Use just enough milk to bring the frosting together, it should be thick enough to hold onto a spoon turned upside down. You may not even need milk.
